Vine’s age: between 8 and 30 years old

Harvest: Manual Harvest in 20 kg crates, segregating each grape variety when they are ripe, during the end of September and the end of October.      

 

White and Rose wines vinification: Pneumatic pressing. Fermentation in temperature controlled stainless steel tanks. Cold stabilisation and filtration.

 

Red wines vinification: fermented in traditional stone lagares, this is called “curtimenta (fermentation on skins) method.
